Hello everyone!!! So yesterday I woke up bright and early and was craving an egg-white omelette! Weird – I know, but it is one of the healthiest breakfast recipes I have come across throughout my four-years in college.
It all starts off with separating the egg white from the egg yolk. This is the trickiest part – so I used this helpful YouTube video as a guide.
After removing the egg whites. you stir all of it together (similar to when you make scrambled eggs)
You grab a pan and you add some butter to it – wait until it melts and spread it around the pan
Add the egg whites to the pan (which is on medium heat)
While that heats up – cut up some veggies!! I used tomatoes and onions – but you can also use spinach, bell peppers and if you are the carnivorous type – add some ham!
Once the egg whites are completely white (instead of clear) add the veggies to it!
Add some cheese
And then start folding the omelette
And voila, your egg-white omelette is done!
Easy. Healthy. Delicious!

Tonight was Fiesta Night in our room! My roommates and I decided to make some delicious Chicken Fajitas! It’s super simple and really fun to make!
I went to Trader Joe’s this afternoon and bought the following things –
3 Bell Peppers
Whole Wheat Tortilla
To get started we first cut up the bell peppers, onions, and chicken into long strips
We then add a little bit of olive oil (1 tbs) to two pans, once they have heated up – add the ingredients to begin cooking them
Once the chicken is fully cooked and the veggies are heated up add the Salsa Autentica to the pan with the veggies and heat it up
In the meantime, start preparing the tortillas – put them in a damp paper towel and add them in the microwave for 30 seconds
Once that is done – set everything up in a buffet style so everyone can create their own fajitas!
It’s fun, simple and interactive!
