Tonight was Fiesta Night in our room! My roommates and I decided to make some delicious Chicken Fajitas! It’s super simple and really fun to make!
I went to Trader Joe’s this afternoon and bought the following things –
3 Bell Peppers
Whole Wheat Tortilla
To get started we first cut up the bell peppers, onions, and chicken into long strips
We then add a little bit of olive oil (1 tbs) to two pans, once they have heated up – add the ingredients to begin cooking them
Once the chicken is fully cooked and the veggies are heated up add the Salsa Autentica to the pan with the veggies and heat it up
In the meantime, start preparing the tortillas – put them in a damp paper towel and add them in the microwave for 30 seconds
Once that is done – set everything up in a buffet style so everyone can create their own fajitas!
It’s fun, simple and interactive!

Hello everyone! So I’m happy to say that I have a great recipe for you guys! Like I promised on my last post, I made a dish that is a Puerto Rican delicacy…It’s called picadillo (pee-ka-di-yo). You guys are going to love this one! It’s so easy and it’s filled with so many flavors!
So here is the step by step process…. First you buy all of these ingredients:
- Ground Beef
- Bell Peppers
- White Onion
- Diced Tomatoes
- Tomato Paste
- Olive Oil
You are going to grab your ground beef and season it with a little bit of salt, pepper and olive oil.
Drizzle that olive oil on a pan and begin cooking the meat.
In the meantime, start boiling some water for the rice…I had my friend Mark (a fellow Puerto Rican) come over and help me with that since I always find a way to mess rice up.
While he was making the rice, I started to chop up all of the olives, bell peppers, onions and raisins.
And I added them to the ground beef
Mix it all together and add your tomato paste & diced tomatoes
Check on your rice and make sure that its fully cooked
Serve it on your plate.
And ENJOY 🙂
